If there is someone on par with the greatness of Julia Child, it would be Jacques Pepin. I’m in the process of writing about his book, Heart and Soul in the Kitchen, a fabulous title that I have been cooking from since it came out last year.
Recently, I purchased his exclusive title for Sur la Table, Poulets & Legumes for myself and have another one to offer to one of you. This book is a collection of Pepin’s favorite chicken and vegetable recipes and was issued in correlation with his gorgeous line of products at Sur la Table. I want them all but settled for the book and the Staub pot topper. Who says I don’t have restraint?

I am lucky to get to go to the original Sur la Table where Jacques and Julia signed my copy of the book they wrote together. Pure joy. I love all his books, but I use Sweet Simplicity all summer as peaches, plums and nectarines come into the Farmers Markets.

Jacques Pepin’s Cauliflower Gratin is a nice change from the usual ways of serving cauliflower. Again with the heavy cream, though–I use a mixture of mix and half-and-half instead. Still good.

Anyway, as for favorite Jacques Pepin recipes, my Tarte Tatin is sort of a combination of Jacques Pepin’s version and Julia Childs’. I love his addition of dried apricots and slivered almonds, which add a nice texture.

One of the best things about many of Jacques Pepin’s recipes is that they’re really just guidelines, and in his TV shows, the dishes are more about techniques and flavors than about exact measurements and times. I love that about him and have learned so much from him over the years.

Recently I saw an episode of one of Jacques Pepin’s shows in which he cooked some chicken thighs on the stovetop. I could almost smell it cooking. I’m hoping to catch that episode again so I can pay more attention and maybe give it a try myself (wish I had his cookware!).

Watching him bone a whole chicken is a thing of beauty. Cooking a ballotine is now on my “to cook” list. I also love how much of a gentleman he is. He always was very deferential to Julia Child, even though he had far more experience than she did. Throw in his ability to draw cute chickens and he’s at the top of my list of people I would most like to have over for dinner. 🙂

From watching Jacques Pepin, I’ve acquired the very useful measurement of “a good…”, as in “a good cup of wine” or “a good teaspoon of salt,” which I take to mean start with the cup or teaspoon and then go from there as needed or to taste. He really has influenced the way I think in the kitchen.

Another thing I love love love about Jacques Pepin is that when he’s prepping food, he often pops a piece of the food into his mouth. It’s not so much that he’s tasting it for seasoning or something (which he also does), it’s just that he likes the food. It’s very endearing.

I was watching Heart and Soul this evening, and something he said made me laugh out loud. He was talking about how much bread to use in a gratin, and the upshot was that no matter if you have a cup and a half, two cups, or two and a half cups, “you won’t go to jail.” I’ll definitely be quoting that in the kitchen as I’m adjusting amounts to suit what I have.
