There were some bananas on the counter pleading to be whipped into some banana bread when I saw the four pieces of leftover bacon from breakfast — Elvis popped into my head. Elvis pops into my head a great deal. One of his concert posters hangs in our bedroom and many mornings I wake up Andrew with Burning Love.
I’m ashamed to admit – Andrew and I already ate a loaf of this bread. They were small — smallish. It was so good warm from the oven. Lord a mighty good. I’m going to hide the other loaf and take it to friends tomorrow – maybe. Jim hates bananas so this bread is all ours….insert evil laugh.
Elvis Bread
4 tablespoons of butter, melted
2 eggs, beaten
2 to 3 very ripe bananas, mashed
1/4 cup of peanut butter
2 slices of cooked crispy bacon, minced
2/3 cup of sugar
1 1/3 cups of flour
3/4 teaspoons of salt
1/2 teaspoon of baking soda
1/4 teaspoon of baking powder
Preheat oven to 350 degrees.
In a large bowl with a wooden spoon – mix the melted butter with the peanut butter to loosen. Add the ripe mashed bananas, sugar, eggs, minced bacon and mix to combine. Add the flour, salt, baking soda and powder — to combine – do not over mix. Butter two small loaf pans about 4 x 6 and divide the batter. Here in Colorado the loaves baked in about 40 to 45 minutes.
While the bread is baking, mix up the glaze — 1 cup of confectioner’s sugar, 1 tablespoon of milk and two tablespoons of maple syrup and a dash of salt. Whisk to combine and set aside until warm bread comes out of the oven. Drizzle over the warm bread and sprinkle with some crumbled bacon, if you desire.
I adapted this recipe from my go to banana bread that I have had written on a recipe card for ages. I would credit the source for the banana bread but I have no recollection.

I think I’ll try in muffin tins. I only have 1 small loaf pan and several large. I’ll just cook until it seems done. Have 3 overripe bananas and a bagful of frozen ones already in freezer for smoothies, so I don’t need to add to that stash. Perfect timing!
