I love Casey Barber’s great book, Pierogi Love, and shared my thoughts on the title over at TasteBook here.
Casey’s dough was so easy to work with and our family gobbled up all the pierogies I have been making. My goal is to make all of the great recipes in this book.

I discovered real pierogis when I moved to Cleveland. There’s a shop here that has about 40 different flavors – love them! But I must admit – my favorite is the simple potato & farmers cheese. Absolutely the perfect comfort food!

Pierogis bring back such special memories for me of my time spent in Canada. I’d never had them before and I would sometimes treat myself to potato and cheese pierogis with a little sour cream on the side for lunch.
I like them baked with potato, onion, and extra sharp cheddar cheese filling. Lots of black pepper in the inside mixture. A cream sauce made of oil, evaporated milk and saute-ed onions to pour over or dip them in. They almost resemble a potato knish but with a cream sauce.
I guess I like the usual Potato and cheese. That’s the only flavor that I have tried and loved it!

Polish, Pittsburgh & Pierogies — what more could you ask for? I’ve made them a few times however they are a LOT of work. My favorite was using the browned sauerkraut after it had been cooked with a pork roast which was surrounded by Granny Smith apples, onions, garlic & apple juice with dabs of butter. So delicious. Of course you can serve with sour cream. Hot or cold.
I make perogies with potatoes, bacon, sauekraut and onions. use the Pittsburgh Pa perogi dough. Like to try others.

Considering my heritage, I should be well versed in Pierogi’s, but I am not. I may have had a frozen one at some time, but all the better reason to have the book!
