Maria Speck’s Simply Ancient Grains has hit the shelves. This book is a follow up to her successful Ancient Grains for Modern Meals and is just as lovely and tempts us to include more whole grain recipes into our meal rotation.
With such recipes as Oatmeal Butternut Pancakes with Browned Buttered Nuts (this look incredible), Olive Oil Biscuits with Cracked Pepper and Honey Glaze, Farrow Scones with Almonds, Apples and Thyme, Overnight Waffles with Teff, Coriander, and Caramelized Pineapples and Dark Chocolate Spelt Waffles with Chile and Warm Raspberry Sauce – your mornings are set.
The Salads and Sides Chapter is just as tempting. Warm Wild Rice Salad with Herb-Roasted Mushrooms and Parmesan, Artichoke and Spelt Salad with Cara Cara Citrus Boost and Oven-Roasted Tofu with Mediterranean Herbs are just a few of the recipes that sound great.
Freekeh Soup with Spicy Harissa Shrimp and Dates and Chicken Stew with Honey-Balsamic Squash and Farro stand out in the Soups and Stews Chapter. Whole Wheat Spaghetti with Orange Walnut Pesto and My Mac and Cheese with Greek Yogurt and Leeks are tabbed to be made from the Pasta Chapter.
The Simply Mains Chapter has many delicious dishes to don our dining room tables. Spicy Honey and Habanero Shrimp with Cherry Couscous and the Mediterranean Meat Loaf with Fresh Herbs and Tangy Tomato Glaze will be made soon in our home.
Maria also covers desserts! Light Lemon Custard with Blackberries and Pomegranate Molasses, Simple Maple Pudding with Farro Piccolo, Greek Yogurt Chocolate Mousse, Walnut Spelt Biscotti with Olive Oil and Lemon-Scented Blondies with Millet and White Chocolate all sound promising.
This book is just as lovely as it’s predecessor!
