My son is an egg lover and when he saw Egg by Blanche Vaughan on our kitchen table – he grabbed it and said he had to review it. The subject matter and the cute cover caught his attention. He has since informed me that he wants me to make all the recipes. Easily done. (I’m making the Honey Madeleines tonight for him – one down, 89 to go). Update: I made the Honey Madeleines — and they taste incredible but I screwed up – I read the directions incorrectly – I read 1 cup of butter instead of 1 stick. I was so hoping to post a beautiful photo — but I will make them again later this week – they are super buttery and tasty but not photogenic. Update: Friday morning I made the Honey Madeleines again and they are so delicious! I added a little glaze to them because here in Colorado everything dries out quickly…the glaze will keep them fresher a while longer.
Egg contains 90 recipes featuring the versatile egg in savory and sweet preparations. Blanche Vaughan, the author, is a food writer and chef who trained at the River Cafe and has worked at Moro and St. John. Stunning photos accompany many of the recipes which are organized by Basics, Breakfast, Lunch, Snacks, Supper, Desserts, Sauces and Drinks.

I’m an innkeeper!! Eggs are my life! Artichoke and portabella mushroom souffles, quiche (every which way), breakfast pizzas (using naan), southwestern breakfast wraps, croissant eggs benedict with creamy spinach souffle, frittatas, and sweet/red potato sausage hash topped with a poached egg are some of my “go-to’s” Would LOVE some fun variety for my guests.

Constantly making gyeran jjim which is a Korean steamed egg dish. You can make it in the microwave, steam it in a pot, or (my personal favorite) in a korean stoneware pot. It comes out soft and fluffy and amazing I can eat it even without the rice!

Growing up I would never eat a fried egg but an over easy one is my favorite way to eat one now. I especially love them sitting on top of some grits. That runny yolk is delicious stirred into the grits.

I think I would say “Quiche” I sometimes make one or two and freeze the 2nd but honestly I buy them frozen for my lunch or a dinner for myself when my husband is away. My favorite egg dish ( at the moment) is the lovely souffle, we vary it with bits of veg and a dash of herb and sometimes a rasher of bacon. It’s always good, and varieties are endless.
