Many a snickerdoodle recipe has been baked in my kitchen and this recipe from Cookies & Cups lives up to its name — it is the Perfect Snickerdoodle.
Andrew loves lemon and since we loved the texture of the snickerdoodle recipe – I played around with Cookies & Cups recipe and came up with Lemon Doodles. I’ve made them twice now – everyone loves them and I gave a cookie jar full to Andrew’s teacher – who proclaimed them heavenly.
Today’s version are decorated for Spring and I will have a happy boy once he arrives home from school!
I have plans for Orange Doodles in the near future as well as making these again with a white chocolate glaze.
Ingredients
- Cookie
- 1 cup of butter, room temperature
- 3/4 cup of granulated sugar
- 1/2 cup of light brown sugar
- 2 eggs
- 1 Tablespoon of vanilla
- 1 teaspoon of baking soda
- 1 teaspoon of cream of tartar
- 1/2 teaspoon of kosher salt
- zest of one large lemon (or two smaller ones)
- 2 3/4 cups of flour
- Lemon Sugar
- 1/4 cup of granulated sugar
- zest of one small lemon
- Lemon Glaze (if using)
- 1 cup of powdered sugar
- Juice of lemons above whisked slowly into sugar to proper consistency
Instructions
Preheat oven to 325 degrees.
Line a baking sheet with parchment paper, set aside.
In a bowl of a stand mixer (or bowl with hand held mixer) - beat both sugars about 3 minutes until light and fluffy. Add eggs and vanilla and beat for another minute on medium speed, scrape sides of bowl.
Turn mixer to medium low and mix in baking soda, cream of tartar, zest and salt. Mix less than a minute, scraping sides.
Turn mixer to low, add flour - until combined.
In a separate bowl make your Lemon Sugar by mixing together lemon zest and sugar, rubbing the zest into the sugar to release the oils.
Using a two Tablespoon cookie scoop, measure out two Tablespoons of dough and roll into a bowl, then roll each ball into the Lemon Sugar mixture.
Place on parchment lined baking sheet about two inches apart. Bake for 10 to 12 minutes, turning sheet halfway through.
Remove and allow to cool. If using the glaze, whisk the two ingredients together and with a spoon drizzle each cookie with a small spoonful. Sprinkles are optional and in my house necessary.

I don’t make Snickerdoodles because my husband doesn’t like cinnamon (but he likes hockey so it’s a trade off 🙂 I think he’d love these!

The recipe does not say when to add the butter. I’m sure the butter gets mixed with the two sugars! I’m mixing up the recipe as I write..
