For years, I have owned The Black Dog Summer on the Vineyard Cookbook yet every time I see it – I have to pick it up and find a home for it. I cannot pass up a restaurant cookbook and especially something that reminds me of the East Coast.

Yesterday, there was a long line at the store so I started looking through it. My neighbor had given me a large zucchini and the recipe for the Stir-Fried Zucchini with Spicy Peanut Sauce sounded perfect. I wanted to make a noodle dish as well so this cut my work in half. When I posted a photograph of this dish, a few people asked for the recipe. The easiest way to share my adaptation of the recipe is to do a post and why not offer one of you a copy of this book?
This dish was absolutely incredible – I almost ate the whole bowl shown in this picture but I don’t feel bad – it’s zucchini! I had tripled the sauce recipe with a few tweaks and used the extra sauce to make peanut noodles and chicken.
Ingredients
- Cooking Sauce
- 3 T tahini, well blended
- 3 ½ T hot water
- 3 ½ T tamari
- 3 T vegetable oil
- 2 ½ tsp sugar
- 2 ½ tsp rice wine vinegar
- 3 T of peanut butter
- 1 garlic clove, minced
- Red pepper flakes to taste
- Stir Fry Ingredients
- 2 T vegetable oil
- 2 tsp dark toasted sesame oil
- ½ cup shelled raw peanuts
- 2 T chili paste
- 5 cloves of garlic, shopped
- 6 small to medium zucchini, quartered lengthwise, then cut into 2-inch spears
- 3 T dry Sherry
- 5 scallions, sliced, for garnish
Instructions
To prepare cooking sauce, whisk together all the ingredients until well blended or place into a blender and blend.
Heat the vegetable oil in a heavy skillet until hot, add the dark sesame oil and peanuts and stir to toast but be careful not to burn. Add in the chili paste and garlic and stir.
Add the zucchini spears and stir fry for two or three minutes. Add the sherry and allow it to reduce about a minute
Add the cooking sauce and lower the heat to medium. Cook for another minute or two.
Serve with sliced scallions for garnish.
