I was shopping at the mega grocery store that opened recently in our area. When I’m not in a hurry, I love to linger in the huge housewares aisles there (pretending I’m childless) and on this particular trip, I came across Wilton Shot Tops. It wasn’t a second later I had a cart not only filled with groceries but lots and lots of shot tops (and some for you, read on).
Hubby’s birthday was April 25th and even though I made him cupcakes with chocolate frosting and a chocolate tart the Friday before – I decided he (we) needed liquored up cupcakes for his actual birthday.
That is how the Snickerdoodle Fireball Shot Cupcake came about. While looking at baking recipes for high-altitude, I came across this cupcake recipe (which also contains adjustments for sea level – so those of you who want to try the recipe below can make the adjustments as shown there) and adapted it. (It’s a great recipe on its own.)
Ingredients
- For the cupcakes - (makes 12)
- 1 cup of all-purpose flour
- 3/4 cup of granulated sugar
- 1 teaspoon of baking powder
- dash of salt
- 4 tablespoons of unsalted butter, at room temp
- 1/2 cup cup plus 1 tablespoon of whole milk
- 1 large egg
- 1/2 teaspoon of pure vanilla extract
- 1/2 teaspoon of cinnamon
- For the Cinnamon Buttercream
- 2 1/2 cups of powdered sugar
- 6 tablespoons of unsalted butter, at room temp
- 3 tablespoons of whole milk
- 1/2 teaspoon of vanilla
- 1/2 teaspoon of cinnamon
Instructions
Preheat the oven to 375 degrees.
Line your cupcake tin with cupcake papers, set aside.
Place the flour, sugar, baking powder, salt, cinnamon and butter in a bowl and beat on slow speed until combined and there is a sandy look to your mix. (you can use a hand-held beater, stand mixer or whisk).
Whisk the egg, vanilla, and milk together in a separate bowl and drizzle into the flour mixture - beat until incorporated, be sure to scrape down sides of bowl. Do not overmix.
Spoon the batter into the cupcake liners until a little over half full and bake in the preheated oven for 20-22 minutes - until light golden.
Allow the cupcakes to cool before decorating with the frosting.
For the frosting: Place all the ingredients in a medium sized bowl and beat until the mixture is combined. Scrape down sides of the bowl - and then beat for several minutes until light and fluffy.
Using a pastry tip or spatula - decorate your cupcakes.
Take your shot tops and following the directions in the book - place the long thinner end into the Fireball or liquor of your choice and as you would do with a baster to remove juices from a pan - siphon the liquor into the shot top (I fill them about half). Insert the long thinner end into the cupcake. (Before eating - squeeze shot top and liquor will seep into your cupcake. Of course you can drink the shot - I won't judge.)

A cupcake I can’t make for home as my husband won’t eat cream cheese. It’s a chocolate cupcake with a dollop of a cream cheese, mini chocolate chip filling inside. It bakes up almost around the filling. Also has a cherry on top. Really yummy!
