Popular food blogger, Chungah Rhee of Damn Delicious, has written a cookbook aptly named Damn Delicious. Many of her fans rave about her recipes and after reviewing her cookbook, I can see why. The book contains 100 super easy, super fast recipes, and we all have times when that is a necessity. I love that fast and easy doesn’t mean using mixes or overly processed ingredients — from scratch, flavorful dishes that we can whip up any night of the week.
Chapters are organized as follows: 1) Put the Fast into Breakfast; 2) One-Pot Comfort in 30Minutes; 3) (Better Than) Takeout Express; 4) Speedy, Simple & Skinny; 5) Quick-Fix Slow Cooker; 6) 30-Minute Supper Sprints; 7) Appetizers and Sides in a Snap; and 8) Last-Minute Drinks and Desserts.
With recipes from Bakery Style Chocolate Chip Muffins, Creamy Chicken and Mushroom Soup, Zucchini Lo Mein, Batter-Fried Cauliflower with Orange Sauce, and Pork Marsala with Mushrooms and Spinach there is something for everyone. For dinner last night, I made the Bang Bang chicken recipe. It was, indeed, damn delicious.
The dish was relatively quick and easy to make, but (I hate when there are buts) I made one mistake – I thought “oh two chicken breasts that’s not enough for all of us” and we like leftovers — so I doubled it. I have Bang Bang chicken for days, but that isn’t a problem – it was good warmed up too because we ate later that evening as my husband worked late.
